Ingredients
  • 12 large shrimp, peel and deveined
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste
  • 2 cups green papaya, peeled seeded and grated
  • 2 cups Opal Apples, peeled, cored and grated
  • 1 cup cilantro, chopped
  • 1/2 cup green onions, sliced
  • 1/2 cup lime juice
  • 1/2 cup fish sauce
  • 1/4 cup brown sugar
  • 2 Thai red chilies, seeded and chopped

(FOR SERVING)

  • Roasted Peanuts
  • Green onions, sliced
  • Cilantro
Directions

Heat the oil in a saucepan over medium high heat, cook the shrimp for about 3 minutes on each side. Season with salt and pepper and set aside.

In a large bowl, toss together the papaya, apples, green onions and cilantro together. Whisk together the lime juice, fish sauce, sugar, and the chilies.

Toss the dressing with papaya apple mixture until combined. Top with shrimp, peanuts and more green onions and cilantro if desired.
