Ingredients
For the fritters:
- 1 cup 2% of full-fat vanilla Greek yogurt
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 2 teaspoon granulated sugar
- 1 tablespoon cinnamon
- Pinch nutmeg
- 3/4 large Opal apple, peeled and chopped
- Avocado oil spray
For the glaze:
- 1 cup confectioners sugar
- 2 tablespoons milk
- ½ teaspoon pure vanilla extract

Preheat the oven to 425°F. Line a baking sheet with parchment paper and set aside.

In a large bowl mix together Greek yogurt, all-purpose flour, baking powder, sugar, cinnamon, nutmeg, and chopped apples until a dough forms. You may have to use your hands to knead the dough.

Divide the dough into 6 balls and flatten each slightly. Place on the prepared baking sheet and spray with avocado oil spray.

Bake for 15 minutes, until golden brown.

While the fritters are baking, make the glaze. In a small bowl combine the confectioners sugar, milk and vanilla extract. Mix until smooth and drippy.

After 15 minutes, the fritters should become golden at the edges and look set. Remove the fritters from the oven and turn the oven to broil.

When cool enough to handle, dip each fritter in the glaze and place back on the baking sheet. Return to the oven for 2 minutes.

Remove from the oven and drizzle again with the glaze.

Transfer to a wire baking rack to cool and let the glaze harden. Enjoy warm!
Note: This recipe is best enjoyed fresh, immediately once cooled out of the oven.
