- 1 pound cod (or other firm white fish)
- 2 teaspoon paprika
- 1⁄2 teaspoon cayenne
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1⁄2 teaspoon oregano
- 1⁄2 teaspoon thyme
- 1⁄2 teaspoon salt
- 1/2 head of red cabbage, shredded
- 2 Opal Apples, peel cored and cut into matchstick slices
- 1/4 cup cilantro, chopped
- 2 tablespoons lime juice
- Salt and pepper, to taste
- Corn tortillas
- Radishes, thickly sliced
- Lime wedges
Preheat oven to 400F degrees.
Mix together the paprika, cayenne, onion powder, garlic powder, oregano, thyme, and salt together.
Pat the fish dry then coat with the spice rub and gently press it into the flesh. Place fish on a parchment lined baking sheet and bake for 10 minutes.
While the fish is baking prepare the slaw by combining the cabbage, apples, cilantro, and lime juice together. Season with salt and pepper. Set aside.
Remove the fish from the sheet pan for it to cool then flake into chunks. Serve together on tortillas, slaw and fresh toppings.
