- 2 Opal apple, cored and sliced
- 1/4 cup honey
- 2 thyme sprigs, leaves removed from stem
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/8 teaspoon cloves
- 2 tablespoons apple cider
- 24 ounces sparkling white grape juice
- Coconut sugar
- Thyme sprigs
Preheat oven to 400F degrees.
Place the apples, honey and thyme leaves on a sheet pan and roast for 15 minutes until the apples are soft and slightly browned. Let the apples cool then puree them in blender with the cinnamon, nutmeg, cloves and apple cider until smooth.
Right before serving, prepare the glasses. Place the coconut sugar in a small plate or saucer. Wet the rim of the glass with water or lemon juice. Dip the glass into the coconut sugar. Stir the apple puree and sparkling grape juice in a large pitcher. Pour into prepared glasses and garnish with a thyme sprig
