Opal Apple Ring Pancakes

Ingredients

  • 1 ¼ cups all-purpose flour
  • 1 cup oat flour
  • 1 1/2 tablespoons baking powder
  • 1 tablespoon ground cinnamon
  • ½ teaspoon salt
  • 2 cups milk
  • ¼ cup salted butter, melted
  • 2 large eggs
  • 1 tablespoon pure vanilla extract
  • Optional: 2 tablespoons white sugar
  • 3 Opal apples, peeled, cored, and sliced into thin rings, about ⅛-inch thick
  • Nonstick oil spray or butter for cooking

Directions

  1. In a medium-sized bowl mix together the all-purpose flour, oat flour, baking powder, cinnamon and salt. Set aside.

  2. In a large bowl combine the milk, melted butter, eggs, vanilla extract, and sugar, if using.

  3. Add the dry ingredients to the wet ingredients. Mix together until smooth.

  4. Heat a large skillet over medium heat. When the pan is hot, spray with nonstick oil spray or coat with butter. Dip an apple slice into the pancake batter on both sides. Let the excess drip off over the bowl. Add to the hot skillet, cooking for 2-3 minutes on both sides, until the exterior is golden. Transfer to a plate.

  5. Repeat with the remaining batter and apples until all the batter and apples are used. Serve warm with maple syrup.
